This is hands down, one of the most delicious recipes I have ever made. Even I couldn’t believe how well it turned out, it is unbelievably delicious and the texture is so close to being like meat its mind-blowing. I can guarantee that when you make this recipe for your family and friends, they will be shocked its vegan.
There is optional overnight prep, but can be done in an hour or two. (I found that the favours develop more overnight.)
For those of you who do not know what jackfruit is, its fruit but when picked young has no flavour. The consistency of the fruit has a very stringy like texture, so when cooked looks like pulled pork (Isn’t that so cool!). Canned Jackfruit can be found at any Asian grocery store, and sometimes in the International isle of grocery stores.
Ingredients
2 Can Young Green Jackfruit (in water or brine)
4 Cloves garlic minced
2 Tsp. Onion Powder
2 Tsp. Garlic powder
2 Tsp. Paprika
1 Tbl sp. Brown Sugar
1 Tbl sp. Soy Sauce
1 Tbl sp. Apple Cider Vingar
1/4 Cup Barbecue Sauce
Start by draining the Jackfruit from the can and rise under cold water. Trim off the hard tip of Jackfruit and place in bowl. Then add all other ingredients and mix around so jackfruit is fully saturated and place in the fridge overnight or for a few hours.
Once Jackfruit is marinated, heat non stick pan over medium high heat and sautee for 10 to 15 minutes until you can squish jackfruit with the back of your spoon will created stringy like texture. Use a Fork or masher to squish fruit until stringy texture is achieved.
Preheat Oven to 375 degrees and prepare cookie sheet, lined with a nonstick baking mat or parchment paper. Spread jackfruit mixture on cookie sheet creating a thin layer and place in oven for 20 minutes, at halfway point take out and mix the jackfruit around allowing the bottom half of layer can become crisp. Once the jackfruit has shrunken and looks crisp pull apart slightly with a fork ad it its done! (Optional mix jackfruit in bowl with some bbq before serving). Its crazy to me how much it actually looks like meat!
I like to have my Jackfruit pulled pork, on pita with some vegan cheese and a Kale slaw.

Thanks for sharing the recipe.Yes jackfruit does have meat like texture. In India it is called vegetarian’s meat. We have many curry and biryani preparations using jackfruit.
