Im sure everyone has heard of the heart warming Disney Movie and Culinary masterpiece called Ratatouille.The mixture of vegetables in this dish meld so well together, creating a symphony of the sense from when you are preparing it to when it is finally served on your dinner table. Ratatouille works well as a main or a side and it is amazingly simple to prepare. If you looking to incorporate more veggies into your life, this is the dish for you! Bring it to your next Potluck or family get together and be sure to surprise everyone that it’s completely vegan !
Ingredients
1 Medium Zucchini
1 Medium Eggplant
1 Red Bell Pepper
1 White Mushrooms
2 Roma Tomatos
5 Garlic Cloves
1 Tblsp Olive Oil
1/2 Cup Tomato Sauce
1/2 Cup Daiya Cheese Shreds *Optional
Start by slicing all vegetables in to 1/4 inch coins, try to make sure all veggies are in uniform though they don’t have to be perfect you just want them all to cook at the same rate. Mince/ Grate garlic cloves finely.
Preheat oven to 375 and prepare baking tin. Pour tomato sauce in to the bottom of baking tin to evenly coat it, begin then layering veggies diagonally onto each other creating a pattern. There is no specific pattern you have to do, make it completely your own. Once you have filled your baking tin with all the veg, sprinkle garlic evenly over all the veggies along with Olive Oil and Salt and Pepper to taste. *Optional sprinkle Daiya cheese*
Place in Oven and bake for 25 mins. The aroma of the dish when finished is absolutely outstanding. Set on a cooling rack and let rest for 5 mins then serve.
I love to have my Ratatouille with some fresh French bread and a balsamic reduction

This looks delicious!! And I actually saw the Ratatouille movie and really loved it. About the Daiya cheese option….I don’t like Daiya cheese. So, do you know of any other great vegan cheese options? Like, do you ever use nutritional yeast? I’m just curious and seeking vegan cheese options, so this was a great opportunity for me to ask 🙂

Thank you! Please try this out guarantee you’ll love it. So if your a no go on Daiya, I would definitely would do some nuch (nutritional yeast) but there are also a bunch of other amazing vegan cheese on the market. Personally I like Daiya but try out Follow your heart, Chao cheese, Tofutti etc i promise there will be a substitute that you’ll like. Hope this helps ☺️

I love the film Ratatouille (learned how to spell Ratatouille because of this), but never ate it. I feel like if I didn’t end up liking it, I would lose my love for the movie. So I’m hesitant but eager to try it!
