Banana bread always brings me back to a time when I was young, in the kitchen with my Mom and Aunt helping them bake on a Sunday afternoon. My love for baking started there and now has grown into a passion. There is something extremely comforting in making something with love that fills the people you love, and believe me this Banana bread is it!
Super moist and full of aromatic cinnamon and nutmeg that will be sure to bring you back to the most nostalgic of times. This recipes is ideal for bananas that are brown and spotty, so no need to throw those babies out.
Its incredibly easy, delicious and best of all I can guarantee that no one will ever miss the egg or diary from the traditional recipe.
4-3 Bananas ( the spottier the better)
1 1/2 C. Flour
1 1/2 tsp Baking powder
1/3 Brown Sugar
3 Tbsp. Walnuts
1/4 C. Coconut oil
1/2 C. Dark Chocolate chips
1. In Large mixing bowl combine flour, baking powder, spices and salt and set aside. Pre heat oven to 350 degree.
2.In a separate bowl mash bananas until they make a paste and then mix in sugar and coconut oil
3. Fold the Banana mixture in with dry ingredients and prepare baking tin
4. Add walnuts and Chocolate chips and fold into mixture one more time
5. Transfer batter into baking tin
6. Bake for 40 mins
